Two Ingredient Ice Cream Sandwich Cake

I made this quick and easy dessert recently for Ladies Night Out with the sweet women from my church.  It's one of those easy desserts that everyone will want the recipe for, yet it takes no time to whip it up.  I spent my morning taking my baby in for his well-baby check-up, so I didn't have time for an elaborate dessert.

The only ingredients needed are mini ice cream sandwiches and whipped topping.  Choose a syrup or another ice cream topping too if you want.  We definitely wanted a topping.  

We got this recipe from my mom.  When she made it, my 4 year old sat on the counter and helped her Nana unwrap the ice cream sandwiches and then layered them in the pan.  If Izzy can make this, then I'm sure you can too.



Place mini ice cream sandwiches on the bottom of a pan.  I chose a small pan for Ladies Night Out, since I knew everyone else was bringing a dish too.  I also made a small pan for my family to enjoy for dessert while I was gone.  It's only fair, right?



Spread whipped topping on top of the sandwiches.  I chose the light option this time.



Add another layer of ice cream sandwiches and another layer of whipped topping.  


Looks messy, but whipped topping covers a multitude of sins.  



Told ya!  And you know what else covers a multitude of sins?  Caramel. 


She's gorgeous.  I love this girl.


Top with anything you want or leave it as it is!  I opted for caramel sauce this time, but you can add sprinkles, strawberries, or one of those ice cream sauces that hardens after you pour it.  Be creative.


Put it in the freezer for a little while before serving.  I put mine in the deep freezer so that it wouldn't melt on the way to the party.

Ingredients:

mini ice cream sandwiches
whipped topping
any other topping you want to use to fancy it up a bit

Directions:

  1. Layer mini ice cream sandwiches.
  2. Layer whipped topping.
  3. Repeat both layers.
  4. Pretty it up with caramel, chocolate, or fruit if you want.
  5. Freeze & serve!
Your guests will not realize they're eating ice cream sandwiches.  This serves up a lot fancier than it looks!
