Here's the latest recipe I tried from Pinterest.
I think it was actually one of the first things I pinned back when I joined Pinterest a few months ago. We all loved this salad. The kids picked what they wanted out of it, leaving the spinach behind. I also served the salad with dinner rolls for the kids. I loved the salad so much that I didn't want a roll. My husband wasn't thrilled with the dressing, so he poured his own favorite vinaigrette over it and chowed down. I thought the dressing was OK and ate it as it was. Next time, I'll try making some changes to the dressing for better flavor. We had to skip the pine nuts because my son has a nut allergy. We traded feta for goat cheese, since my store didn't have any goat cheese. The salad was wonderful and heart healthy. In fact, it's on the menu again tonight for dinner.
I've been in a cooking rut lately, so to shake things up a bit, I go to my Pinterest food board first when meal planning.

Gabby, I am sorry for your loss. Periods of grieving are some of my most productive, I have found. Pinterest can be a great distraction! The Power Salad you tried looks excellent! I have somehow developed an allergy to avocado and cantaloupe over the past year. They happen to be my favorites, so it is a bummer when I can't cook up some beautiful dishes I find on Pinterest. Your blog post has inspired me to begin sorting the many food-related posts into smaller boards. I have tried several dishes from the Website. You should take a look at "My Pinterest Test Kitchen" Board. I will post the dishes I have made, along with comments and any modifications or suggestions. I haven't only moved over the dishes I have cooked, without the comments. ReplyDeleteIt is very flavorful, and a great diversion from plain chicken. I'm not sure how Daigle kid-friendly it is, but it's worth trying for the adults at the very least. I look forward to your future Pinterest Friday posts, as well as the other lovely posts, my friend!

ReplyDeleteAn allergy to avocado and cantaloupe? That's crazy! I read that avocado & banana allergies are connected with an allergy to latex, so it'll be interesting to see if you develop an allergy to either of those as well. Hopefully not, for your sake!
